We don't know of a single person who has tried these crusty sub rolls packed full of zesty chuck roast, juicy pepperoncini, and gooey provolone cheese and had a bad thing to say about them. They're easy enough to make, thanks to your trusty slow cooker, and they're always sure to please! It's no surprise at all why these are Everyone's Italian Sandwich!

Ingredients

  • 1 (3-pound) beef chuck roast boneless, cut into 4 large portions and fat trimmed
  • 2 cups low-sodium beef broth
  • 1 (.7-ounce) packet Italian salad dressing and recipe mix
  • 2 teaspoons Italian seasoning
  • 1 (16-ounce) jar pepperoncini
  • 8 tablespoons butter softened
  • 8 deli-style sub rolls split open
  • 8 ounces provolone cheese sliced

Directions

  • In a slow cooker, add the beef pieces.
  • In a large bowl, add the beef broth, the Italian salad dressing mix, and the Italian seasoning and whisk to combine.
  • Evenly pour the broth mixture over the beef.
  • Reserve 1/3 cup of the pepperoncini juice from the jar, then drain the rest.
  • Remove and discard the pepperoncini stems, then cut the pepperoncini in half.
  • Evenly sprinkle the pepperoncini over the beef, then drizzle with the reserved pepperoncini juice.
  • Cover the slow cooker and cook the beef mixture until the meat is very tender and easy to shred, on high heat about 4-5 hours and on low heat about 8-10 hours.
  • Use two forks to shred the beef mixture in the slow cooker.
  • Preheat the oven to the broil setting.
  • Evenly spread 1 tablespoon of the butter over each of the split sub rolls and place them on a baking sheet.
  • Broil the sub rolls until they are lightly toasted, about 2 minutes.
  • Transfer the baking sheet to a wire rack.
  • Use tongs to evenly place the beef mixture in each of the toasted sub rolls, then top each with 1 slice of the provolone.
  • Broil the sandwiches until the cheese has melted.
  • Slice the sandwiches in half, if desired, and serve.
