Ingredients

For the taco pie:

1 pound ground beef
1 small onion finely diced
1 tablespoon fresh garlic minced
1 tablespoon chili powder
1 (27-ounce) can chili beans with some of the liquid drained off the top of the can, and leaving some liquid within the beans
1 (14.5-ounce) can petite diced tomatoes drained
salt to taste
pepper to taste
1 cup cheddar cheese plus more to taste, grated
2 cups tortilla chips or corn chips

Optional garnishes:

green onion to taste, sliced
sour cream to taste
avocado to taste, diced
guacamole to taste

Directions

Preheat the oven to 350 degrees F.
In a large oven-proof skillet over medium-high heat, cook the beef, the onion, and the garlic until the beef is no longer pink, about 5-7 minutes.
Drain the excess grease from the skillet and return the skillet to the heat.
Stir the chili powder, the beans, and the tomatoes into the beef mixture and simmer until the liquid has slightly thickened, about 5-10 minutes.
Season the beef mixture with the salt and the pepper.
Sprinkle the cheddar cheese over the beef mixture.
Top the beef mixture with the chips.
Bake, uncovered, until the casserole is heated through and the cheese has melted, about 15-20 minutes.
Serve with the green onion, the sour cream, the avocado, and the guacamole.
