Ingredients
- 4 (4-6 ounce) filet mignon steaks
- salt to taste
- black pepper to taste
- 1 1/2 tablespoons neutral-flavored oil such as safflower oil, canola oil, grapeseed oil, or peanut oil
- 4 tablespoons butter
- 4 cloves garlic smashed
- 4 sprigs fresh rosemary
Directions
- Let the steaks sit at room temperature for 20 minutes.
- Preheat the oven to 450 degrees F.
- Season the steaks with the salt and the black pepper on both sides.
- In a cast iron skillet over high heat, heat the oil.
- In a single layer, transfer the steaks to the oil and cook until they are browned, about 2-3 minutes per side.
- Add the butter to the steaks and cook until it melts.
- Add the garlic and the rosemary to the melted butter, stir to combine, and spoon over the steaks.
- Insert an oven-safe instant thermometer into the thickest part of one of the steaks and bake until they reach an internal temperature of at least 135 degrees F for a medium-cooked steak.
- Let the steaks rest until they reach an internal temperature of at least 145 degrees F, about 5 minutes.
- Spoon the pan drippings over the steak, plate, and serve immediately.
