Ingredients
- 8 large eggs
- 1 teaspoon Old Bay seasoning
- 1 tablespoon water
- kosher salt to taste
- black pepper to taste
- 1 tablespoon olive oil or unsalted butter
- 1 russet potato diced, browned and cooked
- 4 ounces kielbasa thinly sliced, browned and cooked
- parsley optional, to taste, chopped, for garnish
Directions
- In a large bowl, add the eggs, the Old Bay, the water, the salt, and the pepper and whisk to combine.
- In a 10-inch nonstick skillet over medium heat, add the oil.
- Add the egg mixture to the hot skillet and cook, while stirring it with a rubber spatula every few seconds, until the eggs are semi-soft, about 2-3 minutes. For more firm eggs, cook the eggs for an additional 1-2 minutes.
- Add the cooked potatoes and the cooked kielbasa to the egg mixture and fold to combine.
- Serve garnished with the parsley.
