Ingredients

  • 1 tablespoon olive oil
  • 3 chicken breasts cubed
  • salt to taste
  • black pepper to taste
  • 4 cloves garlic minced
  • 2 1/2 cups chicken broth
  • 2 1/2 cups heavy cream
  • 1/2 pound penne pasta uncooked
  • 2 cups parmesan cheese grated, divided
  • 2 cups mozzarella cheese shredded
  • fresh parsley leaves to taste, for garnish

Directions

  • Grease a 9x13-inch baking dish.
  • In a large skillet over medium-high heat, heat the olive oil.
  • Add the cubed chicken to the oil and season with the salt, the black pepper, and the minced garlic.
  • Cook the chicken, while stirring frequently, until it is browned and reaches an internal temperature of 165 degrees F.
  • Add the chicken broth, the heavy cream, and the penne pasta, stirring to combine, and bring the mixture to a boil.
  • Cover, reduce the heat to low-medium, and simmer, while stirring frequently, about 15-20 minutes.
  • Preheat the oven's broiler.
  • Turn the stovetop heat off, add 1 1/2 cups of the parmesan cheese to the chicken-pasta mixture, and stir to combine.
  • Transfer 1/2 of the chicken-pasta mixture to the prepared baking dish.
  • Evenly sprinkle 1 cup of the mozzarella cheese on top of the chicken-pasta mixture.
  • Evenly pour the remaining chicken-pasta mixture over the cheese layer.
  • Sprinkle the remaining mozzarella cheese and the remaining parmesan cheese on top of the chicken-pasta mixture.
  • Broil the Alfredo bake until the cheese is golden-brown, about 10-15 minutes.
  • Garnish the Alfredo bake with the parsley.
  • Serve.
