Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup walnuts
  • 1 pound shrimp peeled and deveined
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 2 large eggs beaten
  • 1 cup cornstarch
  • vegetable oil to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons heavy cream
  • white rice to taste, cooked and warm, for serving
  • green onions to taste, thinly sliced, for garnish

Directions

  • In a small saucepan over medium heat, add the water and the sugar and bring to a boil.
  • Add the walnuts to the sugar water and let them boil for 2 minutes.
  • Use a slotted spoon to transfer the walnuts to a baking sheet and let them cool.
  • Pat the shrimp dry with a paper towel. Lightly season them with the salt and the pepper.
  • Place the beaten eggs in a shallow bowl and the cornstarch in a second shallow bowl.
  • Dip the seasoned shrimp in the eggs, then in the cornstarch to coat them well.
  • In a large skillet over medium heat, add 1 inch of the oil.
  • Add the dredged shrimp, in batches, and fry until they are golden, about 3-4 minutes.
  • Use a slotted spoon to transfer the cooked shrimp to a paper-towel-lined plate to drain.
  • In a medium bowl, add the mayonnaise, the honey, and the heavy cream and whisk to combine.
  • Add the cooked shrimp to the sauce and toss to combine.
  • Serve the shrimp over the rice, sprinkled with the candied walnuts and the green onions.
