Ingredients
- 1 tablespoon olive oil
- 5 ounces smoked pancetta
- 1 red onion diced
- 1 chicken breast
- 1 red pepper diced
- 1 ounce canned chopped tomatoes
- 5 ounces barbeque sauce
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes
- salt to taste
- pepper to taste
- 5 ounces water
Directions
- Preheat the oven to 355 degrees F.
- In a nonstick, oven-safe skillet over low-medium heat, warm the olive oil.
- Fry the diced onions and the pancetta until tender, about 5 minutes.
- Add the chicken to the onion mixture and fry, stirring occasionally, until the chicken turns white on the outside, about 5 minutes.
- Add the tomatoes, the barbeque sauce, the diced peppers, the smoked paprika, the oregano, and the chili flakes into the chicken mixture. Stir to combine.
- Season the mixture with the salt and the pepper.
- Add the water to the mixture and stir to combine.
- Cover the skillet and bake until the chicken's internal temperature reads 165 degrees F and the veggies are tender, about 1 hour.
- Serve.
