Ingredients

  • 1 pound 90% lean ground beef
  • 1 (14.5-ounce) can diced tomatoes with mild green chiles undrained
  • 1 (14.5-ounce) can beef broth
  • 1 tablespoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 2 cups instant brown rice uncooked
  • 1 medium sweet red pepper sliced
  • 1 medium green pepper sliced
  • 1 cup Colby-Monterey Jack cheese shredded

Directions

  • Heat a large cast iron skillet over medium heat.
  • Add the beef to the skillet and cook until it is no longer pink, about 6-8 minutes.
  • Break the beef into crumbles and drain the liquid from the skillet.
  • Add the tomatoes, the broth, the chili powder, the salt, and the garlic to the beef mixture and bring it to a boil.
  • Add the rice, the red peppers, and the green peppers to the beef mixture.
  • Lower the heat and simmer the rice mixture, covered, until the liquid has absorbed, about 8-10 minutes.
  • Transfer the skillet from the heat, sprinkle the top of the rice mixture with the cheese, cover the skillet, and let it stand until the cheese is melted.
  • Serve.
