Ingredients
- 1 (15-ounce) can black beans rinsed and drained
- 2 cups fresh or frozen corn thawed
- 1 cup salsa
- 4 (4-ounce) chicken breast halves boneless and skinless
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1 cup cheddar cheese shredded
- 2 green onions chopped
Directions
- Preheat the grill to medium heat.
- Mix the beans, the corn, and the salsa together.
- Divide the bean mixture evenly among four 18x12-inch pieces of heavy-duty foil.
- Top the bean mixture with the chicken.
- Mix the garlic powder, the pepper, and the salt together and sprinkle the mixture over the chicken.
- Fold the foil over the chicken, sealing it tightly.
- Grill the packets, covered, until a thermometer inserted into the chicken registers 165 degrees F, about 15-20 minutes.
- Open the foil carefully to allow the steam to escape.
- Sprinkle the cheese and the green onions over the chicken.
- Serve.
