Ingredients

  • 1/2 pound dried salted codfish fillets boneless
  • water to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon granulated sugar
  • 1/2 medium onion finely diced
  • 1 teaspoon fresh thyme minced
  • 2 tablespoons red bell pepper minced
  • 1/2 teaspoon scotch bonnet pepper powder or hot sauce
  • 3 tablespoons parsley minced
  • 1 large egg
  • 1/2 cup milk plus more, to taste
  • salt to taste
  • freshly ground black pepper to taste
  • 3 cups vegetable oil

Directions

  • In a large bowl, add the codfish and enough of the water to just cover the fillets and allow them to soak for at least 8 hours and up to several days, changing the water several times. This is important to remove the salt.
  • Drain the water.
  • Add the fish to a food processor and pulse until it is finely shredded.
  • In a second large bowl, add the flour, the baking powder, the smoked paprika, the granulated garlic, and the granulated sugar and whisk to combine.
  • Add the shredded fish, the onions, the thyme, the red bell peppers, the scotch bonnet pepper powder, the parsley, and the egg to the flour mixture and whisk to combine.
  • Gradually add 1/2 cup of the milk, 1/4 cup at a time, to the fish mixture, while stirring continually. Add the extra milk, as needed, until the desired texture is reached.
  • Taste the fish mixture and season with the salt and the black pepper, as needed. Stir to combine.
  • In a large skillet or saucepan, add the vegetable oil and heat it to 350 degrees F.
  • Carefully place spoonfuls of the fish batter mixture, in batches, into the heated oil and fry until they are crisp and golden-brown, about 3-4 minutes. Carefully flip the fritters as needed with a slotted spoon to ensure they are browned on all sides evenly. Repeat the frying process until all of the fritters are fried.
  • Use a slotted spoon to place the fried fritters on a paper-towel-lined plate to drain.
  • Serve warm.
