Ingredients

  • 1 large egg lightly beaten
  • 2 tablespoons lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 4 (6-ounce) catfish fillets
  • 3 tablespoons canola oil

Directions

  • In a shallow bowl, combine the egg and the lemon juice.
  • In another shallow bowl, combine the flour, the cornmeal, the Cajun seasoning, the garlic powder, and the salt.
  • Dip the catfish fillets into the egg mixture and then into the cornmeal mixture.
  • In a large skillet, heat the oil over medium heat.
  • Fry the fish, two at a time, just until the fillets begin to flake easily with a fork and it reaches 145 degrees F internally, about 5-6 minutes per side.
  • Serve.
