Ingredients

neutral oil to taste, for oiling the grill grates
2 firm ripe peaches quartered (about 1 pound total)
2 (5-ounce) packages baby arugula
1 cup feta cheese crumbled
3/4 cup fresh mint leaves torn
3/4 cup pistachios toasted and roughly chopped
1/2 cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1/4 teaspoon table salt
1/4 teaspoon black pepper

Directions

Preheat the grill to high heat, about 450-550 degrees F.
Using the neutral oil, generously oil the grill grates.
Place the peaches, cut-side down, on the oiled grill grates and grill, uncovered and flipping them frequently, until well-charred, about 4 minutes.
In a large bowl, add the arugula, the feta, the mint, and the pistachios and toss to combine.
In a medium bowl, add the extra-virgin olive oil, the vinegar, the lemon juice, the Dijon mustard, the honey, the salt, and the pepper and whisk until well-combined.
Drizzle the vinaigrette over the salad mixture and toss to combine.
Add the grilled peaches over the salad.
Serve.
