Ingredients
- 2 tablespoons olive oil
- 6 chicken thighs skinless
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 medium onion sliced
- 1 cup chicken stock
- 1/2 cup white wine
- 1 (14.5-ounce) can crushed tomatoes in thick purée
- 1 teaspoon dried thyme
- 1/2 tablespoon dried rosemary
- 1 tablespoon lemon-pepper
- rice to taste, cooked, hot, and buttered
- 2 tablespoons fresh parsley leaves chopped
Directions
- Heat the olive oil in a 12-inch skillet over medium-high heat.
- Pat the chicken dry with a paper towel and season with the salt and the pepper.
- Brown the chicken in the hot oil, 4 minutes on each side.
- Transfer the chicken to a plate and drain all but 1 tablespoon of the oil from the skillet.
- Add the onion to the skillet and sauté until tender, about 3 minutes.
- Add the stock and the wine to the onion and stir, scraping any brown bits off the bottom of the pan.
- Turn the heat to high and reduce the onion mixture by half, about 3 minutes.
- Add the crushed tomatoes, the thyme, the rosemary, the lemon-pepper, and the browned chicken thighs into the onion mixture.
- Cover the skillet and cook on medium-low heat until the chicken internally reaches 165 degrees F and is tender, about 40 minutes.
- Serve the chicken and the sauce on top of the rice and sprinkle with the parsley.
