Ingredients
- 3/4 cup butter softened
- 1 cup sugar plus more, to taste
- 1 large egg room temperature
- 1/4 cup dark molasses
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
Directions
- Preheat the oven to 350 degrees F.
- In a large bowl, cream together the butter and 1 cup of the sugar until it is pale yellow in color and fluffy.
- Beat in the egg and the molasses.
- In a separate bowl, combine the flour, the ginger, the baking soda, the cinnamon, the cloves, and the salt.
- Gradually add the flour mixture to the butter mixture, mixing it constantly, until well incorporated.
- Roll the dough into 1 1/2-inch balls.
- Roll the dough balls in the extra sugar.
- Place the dough balls onto an ungreased baking sheet, about 2 inches apart from each other so they have room to expand.
- Bake until puffy and lightly browned, about 10-12 minutes.
- Remove the cookies from the oven and let them cool on a wire rack.
- Serve warm or at room temperature.
