Ingredients
For the taquitos:
- vegetable or canola oil to taste, for frying
- 3 cups chicken cooked, shredded
- 6 ounces cream cheese softened
- 1 1/2 cups baby spinach stems removed, chopped
- 1 1/2 cups Colby Jack cheese or Mexican blend cheese shredded
- 1/2 cup salsa store-bought or homemade
- 1/3 cup sour cream
- salt to taste
- pepper to taste
- 12 (6-inch) corn tortillas
Optional toppings:
- lettuce to taste, shredded
- tomatoes to taste, chopped
- sour cream to taste
- pico de gallo to taste
Directions
- Fill a saucepan with 1/2-inch of the oil and heat over medium heat until it reaches 350 degrees F.
- While the oil is heating, in a large bowl, mix the chicken, the cream cheese, the spinach, the shredded cheese, the salsa, 1/3 cup of the sour cream, the salt, and the pepper together.
- Add a few tablespoons of the chicken mixture to the center of a tortilla and spread it out.
- Roll the tortilla up and use tongs to carefully place it, seam-side down, in the hot oil.
- Cook the filled tortilla until it is golden-brown on both sides, about 2-3 minutes.
- Transfer the tortilla on paper towels to drain.
- Repeat the cooking process until all of the tortillas have been filled, rolled, and fried.
- Serve the taquitos with the lettuce, the tomatoes, the sour cream, and the pico de gallo.
