Ingredients

For the taquitos:

  • 3 ounces cream cheese room temperature
  • 1/3 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1 cup Monterey Jack cheese and/or cheddar cheese shredded
  • 2 cups chicken cooked, chopped or shredded
  • 12 small whole-grain tortillas warmed
  • olive oil cooking spray to taste
  • kosher salt to taste

For dipping:

  • salsa to taste
  • guacamole to taste
  • Greek yogurt to taste
  • sour cream to taste

Directions

  • Preheat the oven to 375 degrees F.
  • Line an 18x26-inch baking sheet with parchment paper.
  • In a large bowl, add the cream cheese, the salsa, the chili powder, the cumin, and the garlic powder and mix well.
  • Add the shredded cheese and the chicken to the cream cheese mixture and mix well.
  • Place the tortillas on a flat surface and top each of them with 3 tablespoons of the chicken mixture, positioned in a line across the lower third of the tortilla.
  • Roll the filled tortillas up tightly and place them, seam-side down, on the prepared baking sheet.
  • Lightly spray the tops of the taquitos with the olive oil cooking spray and sprinkle with the salt.
  • Bake the taquitos until they are lightly browned, about 15 minutes.
  • Serve the taquitos with the salsa, the guacamole, the Greek yogurt, and the sour cream for dipping.
