Ingredients

  • 4 tablespoons butter divided
  • 2 large carrots peeled and grated
  • 1/2 medium onion diced
  • 1 green bell pepper diced
  • 5 cloves garlic minced
  • 2 1/2 pounds ground beef
  • 1 1/2 cups ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon dry mustard
  • 1 cup beef stock plus more, to taste
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • hot sauce optional, to taste
  • 1 (12-16-ounce) package slider rolls 12 count
  • 1 teaspoon everything bagel seasoning or sesame seeds

Directions

  • Preheat the oven to 375 degrees F.
  • Coat a 9x13-inch baking dish with nonstick cooking spray.
  • In a large skillet over medium heat, melt 2 tablespoons of the butter.
  • Add the carrots, the onions, and the green bell peppers to the melted butter and cook, stirring constantly, until the veggies are slightly softened, about 4 minutes.
  • Add the garlic to the veggie mixture and cook, stirring constantly, for 1 minute.
  • Add the ground beef to the veggie mixture and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes. Drain the excess grease.
  • Add the ketchup, the brown sugar, the chili powder, the dry mustard, the beef stock, the tomato paste, the Worcestershire sauce, the salt, and the black pepper to the beef mixture, stir to combine, and simmer, about 3-5 minutes.
  • Add the hot sauce to the beef mixture and stir to combine.
  • Transfer the beef mixture to the prepared baking dish.
  • In a small microwave-safe bowl, melt the remaining butter in the microwave.
  • Add the slider rolls (tops and bottoms still together) to the top of the beef mixture and give the rolls a little push.
  • Use a pastry brush to brush the melted butter all over the tops and sides of the slider rolls.
  • Evenly sprinkle the everything bagel seasoning on top of the slider rolls.
  • Bake the casserole until the tops of the slider rolls are toasty, about 8-10 minutes.
  • Plate and serve.
