Ingredients
- 8 thin slices prosciutto
- 2 cups ground chicken plus more as needed
- 1/2 small yellow onion finely chopped
- 1/2 small red bell pepper finely chopped
- 1 egg lightly beaten
- 2/3 cup fresh breadcrumbs
- 2 tablespoons fresh chives finely chopped
- 1/3 cup barbeque sauce divided
- salt to taste
- pepper to taste
- 2 tablespoons tomato sauce
- 1 tablespoon brown sugar
- potatoes optional, cooked as you prefer, to taste
- green beans optional, for serving
Directions
- Preheat the oven to 390 degrees F.
- Grease a 4x8-inch loaf pan.
- Line the base and the sides of the loaf pan with the prosciutto, allowing for some overlap.
- Combine the chicken, the onion, the bell pepper, the egg, the breadcrumbs, the chives, and 2 tablespoons of the barbeque sauce in a bowl.
- Season the mixture with the salt and the pepper.
- Press the meatloaf mixture into the prepared pan.
- Cover the loaf pan with foil and bake for 25 minutes.
- Combine the tomato sauce, the brown sugar, and the remaining barbeque sauce in a small bowl.
- Brush the meatloaf with the sauce mixture.
- Bake until the sauce caramelizes and the meatloaf is cooked to 165 degrees F, about 15-20 minutes.
- Let stand for 5 minutes.
- Slice the meatloaf and serve with the potatoes and the green beans.
