Ingredients
- 1 pound ground beef
- 1 (46-ounce) can tomato juice
- 2 potatoes peeled and diced
- 2 carrots chopped
- 1 onion chopped
- 1 (14.5-ounce) can green beans
- 1 (14-ounce) can whole kernel corn
- ground ginger to taste
- salt to taste
- black pepper to taste
Directions
- In a saucepan over medium heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
- Drain the excess fat from the saucepan.
- Add the tomato juice to the ground beef and stir to combine.
- Add the potatoes, the carrots, and the onions to the beef mixture and stir to combine.
- Add the green beans and their juices and the corn and their juices to the beef mixture and stir to combine.
- Season the soup mixture with the ginger, the salt, and the black pepper.
- Reduce the heat to low and let the soup mixture simmer until thickened and the flavors meld together, about 1 hour.
- Serve.
