Ingredients

  • 5 tablespoons cold unsalted butter divided
  • 1 small yellow onion minced
  • 1 stalk celery thinly sliced
  • 2 carrots medium-diced
  • 1 1/4 cups all-purpose flour divided
  • 3 cups chicken broth
  • 2 cups chicken cooked and diced
  • 1/3 pound green beans trimmed, cut into 1-inch pieces
  • table salt to taste
  • black pepper to taste
  • 1 teaspoon baking powder
  • 1 teaspoon coarse salt
  • 2 tablespoons fresh parsley chopped
  • 1/2 cup whole milk
  • fresh chives optional, to taste, for garnish

Directions

  • In a large saucepan over medium-high heat, melt 3 tablespoons of the butter.
  • Add the onions, the celery, and the carrots to the melted butter and cook, while stirring frequently, until the onions are translucent, about 4 minutes.
  • Add 1/4 cup of the flour to the onion mixture and cook, while stirring constantly, until the raw flour smell disappears, about 1 minute.
  • Gradually add the chicken broth to the onion mixture, while stirring constantly, and bring the mixture to a boil.
  • Reduce the heat to medium-low and simmer the onion mixture until thickened slightly, about 5 minutes.
  • Add the chicken, the green beans, the table salt, and the black pepper to the onion mixture and stir to combine.
  • In a large bowl, add the remaining flour, the baking powder, the coarse salt, and the parsley and whisk to combine.
  • Add the remaining cold butter to the flour mixture and cut it in with a fork to combine.
  • Add the milk to the flour mixture and stir to combine into a batter.
  • With a large spoon, drop the batter mixture over top of the chicken mixture.
  • Cover the saucepan and simmer until the dumplings are cooked through and a toothpick inserted into the center of the largest dumpling comes out almost clean, about 12 minutes.
  • Serve topped with the chives.
