Ingredients
- 1 (1.5-pound) cod loin fillet skinless and patted dry
- salt to taste
- pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons lemon juice
- 4 cloves garlic minced
- 1/4 cup butter diced
- 1 small lemon sliced into rounds
- parsley to taste, chopped, for garnish
Directions
- Preheat the oven to 400 degrees F.
- Lightly grease a rectangular baking dish.
- Season the cod fillet with the salt and the pepper and place it in the prepared baking dish.
- In a bowl, add the olive oil, the lemon juice, the garlic, the salt, and the pepper and whisk to combine.
- Pour the lemon sauce over the cod fillet and evenly top with the diced butter and the lemon slices.
- Bake the cod fillet until it reaches an internal temperature of 145 degrees F and flakes easily, about 15-20 minutes.
- Slice the cod fillet into serving-size pieces.
- Serve the cod garnished with the parsley and the lemon slices from the baking dish.
