Ingredients
- 1 pound chicken thighs bone-in and skin-on
- 2 teaspoons garlic powder
- 1/4 teaspoon chipotle powder
- 1/4 teaspoon chili powder
- 1/8 teaspoon paprika
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/3 cup barbecue sauce plus more, to taste
Directions
- Place the chicken thighs on a cutting board and pat them dry with a paper towel.
- In a small mixing bowl, combine the garlic powder, the chipotle powder, the chili powder, the salt, and the pepper.
- Massage the rub evenly into the chicken thighs.
- Allow the chicken to rest for about 30 minutes.
- Preheat the grill for direct medium-high heat.
- Once preheated, place the chicken skin-side down on the grill over direct heat for 4-5 minutes to crisp the skin.
- Flip the thighs and cook for an additional 4-5 minutes.
- Flip the chicken thighs once more and move them to indirect heat.
- Brush the chicken thighs evenly with 1/3 cup of the barbecue sauce.
- Cover the grill and allow the sauce to caramelize for 2-3 minutes.
- Ensure the chicken thighs are cooked through at 165 degrees F internally.
- Remove the chicken thighs and allow them to rest for about 5 minutes before coating them with the extra barbecue sauce.
- Serve warm.
