Ingredients

1 pound lean ground beef
2 medium onions chopped
1 1/2 cups carrots finely chopped
2 cups mashed potatoes without added milk and butter
1/4 cup beef broth
1 teaspoon rubbed sage
3/4 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon pepper
1 sheet refrigerated piecrust
1 large egg optional, beaten

Directions

Preheat the oven to 400 degrees F.
In a large nonstick skillet over medium heat, cook the beef, the onions, and the carrots, while breaking the meat into crumbles, until the meat is no longer pink, about 5-10 minutes. Drain the excess grease if needed.
Stir the mashed potatoes, the broth, the sage, the salt, the thyme, the marjoram, and the pepper into the beef mixture.
Spoon the beef mixture onto an ungreased 9-inch pie plate.
Place the piecrust over the filling and crimp the edge to seal.
Cut slits on top of the piecrust for venting and brush with the egg wash.
Bake the pot pie until the crust is golden-brown, about 30-35 minutes.
Let the pot pie stand for 10 minutes.
Serve.
