Ingredients

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil plus more, for greasing a baking sheet
  • 2 cloves garlic minced
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 2 pounds Brussels sprouts halved
  • 4 slices bacon diced
  • 4 large eggs
  • 2 tablespoons parmesan grated
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh chives chopped

Directions

  • Preheat the oven to 400 degrees F.
  • Lightly oil a baking sheet.
  • In a small bowl, whisk the balsamic vinegar, the honey, the olive oil, the garlic, the salt, and the pepper together.
  • Place the sprouts and the bacon in a single layer on the prepared baking sheet, drizzle with the balsamic vinegar mixture, and stir to combine.
  • Bake the sprout mixture until the sprouts are tender, about 10-12 minutes.
  • Transfer the pan from the oven, use a spatula to carefully create four wells in the sprout mixture, and gently crack the eggs into the wells.
  • Sprinkle the eggs with the parmesan, the red pepper flakes, the salt, and the pepper.
  • Bake the casserole until the eggs have set, about 7-9 minutes.
  • Serve the bake garnished with the chives.
