Ingredients
- 12 corn tortillas
- 1 tablespoon taco seasoning
- 1 1/2 pounds chicken breast cooked and shredded
- 2 cups mozzarella shredded
- 2 cups iceberg lettuce shredded
- 1 cup sour cream optional
- 1 cup guacamole optional
- 1 cup pico de gallo optional
- canola oil for frying
Directions
- Wrap the tortillas in a paper towel.
- Warm them in the microwave for about 1 minute.
- In a large mixing bowl add together the taco seasoning, shredded chicken breast, and mozzarella.
- Using 1 warmed tortilla each time, measure out about 1/3 cup of the chicken filling, ladling it onto the center of the tortilla.
- Tightly roll up the tortilla with the filling, sticking a toothpick through the tortilla to hold it together while it fries.
- Repeat with the rest of the tortillas
- Heat up the canola oil over medium heat in a skillet or pan until the oil is glistening.
- Gently fry the prepared tortillas in small batches until they are a light brown, rotating them every 1-2 minutes., about 4 minutes.
- Transfer the fried tortillas to a plate.
- Top with the shredded lettuce, sour cream, guacamole, and pico de gallo.
- Serve!
