Ingredients
- 1 (14.5-ounce) can diced tomatoes undrained
- 1 (6-ounce) package chicken stuffing mix
- 1/2 cup water or chicken broth
- 2 cloves garlic minced
- 1 1/2 pounds chicken breasts boneless and skinless, cut into bite-size pieces
- 1 teaspoon dried basil leaves
- 1 cup mozzarella shredded
- parsley optional, to taste, for garnish
Directions
- Preheat the oven to 400 degrees F.
- Mix the tomatoes, the stuffing mix, the water, and the garlic just until the stuffing mix is moistened.
- Layer the chicken, the basil, and the mozzarella in a 9x13-inch baking dish.
- Layer the stuffing mixture on top of the chicken-mozzarella mixture.
- Bake until the chicken is cooked through, about 30 minutes.
- Serve garnished with the parsley.
