Ingredients
- 1 cup semisweet chocolate chips
- 1/2 cup mini chocolate chips
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/4 cup vegetable oil
- 1/4 cup unsalted butter melted
- 2/3 cup light brown sugar packed
- 1 large egg room temperature
- 1 cup buttermilk room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons sparkling sugar optional
Directions
- Preheat the oven to 425 degrees F.
- Line a standard 12-cup muffin tin with paper liners.
- In a small bowl, add the semisweet chocolate chips and the mini chocolate chips and stir to combine. Set the chocolate chips aside.
- In a large bowl, add the flour, the baking powder, the baking soda, and the salt and whisk to combine.
- In a medium bowl, add the oil, the melted butter, the brown sugar, the egg, the buttermilk, and the vanilla and whisk to combine.
- Add the oil mixture to the flour mixture and stir until just combined into a batter.
- Add 1 cup of the chocolate chips to the batter and stir gently to combine.
- Chill the batter in the refrigerator for at least 15 minutes.
- Transfer the batter from the refrigerator and spoon the batter evenly into the cups of the prepared muffin tin.
- Top the batter in the muffin cups evenly with the remaining chocolate chips. Make sure to press the chocolate chips lightly into the batter.
- Sprinkle the tops of the batter evenly with the sparkling sugar.
- Bake the muffins for 5 minutes.
- Reduce the oven temperature to 350 degrees F and continue to bake the muffins until a toothpick inserted into the center of a muffin comes out relatively clean with only a few moist crumbs attached, about 12-14 minutes.
- Transfer the muffin tin to a wire rack to cool.
- Serve.
