Ingredients

For the chicken:

  • 2 teaspoons extra-virgin olive oil
  • 1 1/2 pounds chicken breasts boneless and skinless, cut into small cubes
  • salt to taste
  • pepper to taste
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy sauce
  • 3 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional

Optional, for serving:

  • brown rice to taste, cooked and hot
  • green onions to taste, sliced
  • sesame seeds to taste
  • nuts to taste, such as walnuts or peanuts, chopped
  • lime wedges to taste

Directions

  • In a large skillet over medium-high heat, add the olive oil.
  • Lightly season the chicken pieces with the salt and the pepper.
  • Add the chicken pieces to the skillet and cook, undisturbed, until they are browned on one side, about 3-4 minutes.
  • In a small bowl, add the honey, the soy sauce, the garlic, and the red pepper flakes and whisk until well-combined.
  • Add the glaze mixture to the pan and toss to coat the chicken pieces.
  • Cook the chicken pieces, while stirring occasionally, until the meat is cooked through and reaches an internal temperature of 165 degrees F, about 4-5 minutes.
  • Plate the chicken over the rice.
  • Serve topped with the green onions, the sesame seeds, the nuts, and the lime wedges.
