Ingredients

2 tablespoons olive oil
1 shallot chopped
1 1/2 cups forbidden black rice such as Lotus Foods® Forbidden Rice
1 teaspoon dried thyme
2 1/2 cups plus 1 tablespoon vegetable broth
1 teaspoon garlic powder
1 bay leaf
salt to taste
pepper to taste
1/3 cup sliced almonds divided
2 tablespoons parsley for garnish

Directions

In a 10-inch skillet over medium heat, add the oil.
Add the shallots to the heated oil and cook, while stirring, until they are golden and fragrant, about 4-5 minutes.
Add the rice and the thyme to the shallots and sautè, about 3-4 minutes.
Add the vegetable broth, the garlic powder, the bay leaf, the salt, the pepper, and 1/2 of the almonds to the rice mixture and bring to a simmer, stirring constantly.
Cover the skillet and reduce the heat to low. Cook the rice mixture until all the liquid has evaporated and the rice is tender, about 25-30 minutes.
Serve the rice garnished with the remaining almonds and the parsley.
