Ingredients

  • 1 (16-ounce) box spiral pasta uncooked
  • 6 strips bacon
  • 4-5 chicken breasts boneless, skinless, and cubed
  • 1 tablespoon garlic powder
  • salt to taste
  • pepper to taste
  • 2 cans cream of chicken soup
  • 2 cups Monterey Jack cheese shredded and divided

Directions

  • Preheat the oven to 400 degrees F.
  • Coat a 9x13-inch baking dish with nonstick cooking spray.
  • In a large pot of salted boiling water, cook the pasta to al dente according to the package directions. Drain and return to the pot.
  • While the pasta cooks, in a large skillet over medium heat, cook and crumble the bacon.
  • Move the cooked bacon to a plate.
  • In the same skillet, add the chicken, the garlic powder, the salt, and the pepper in the bacon drippings and cook until the chicken reaches 165 degrees F internally.
  • Add the cooked chicken, the cream of chicken soup, and 1 cup of the cheese to the pasta and mix well.
  • Pour the pasta mixture into the prepared baking dish and top with the crumbled bacon and the remaining cheese.
  • Bake until the cheese is melted and beginning to brown on top, about 20 minutes.
  • Serve.
