Ingredients
- 8-10 chicken breast halves boneless and skinless
- 1 cup apricot-pineapple preserves
- 1/3 cup Dijon mustard
- 2 teaspoons lemon rind grated
- 1/3 cup fresh lemon juice
- 1/2 teaspoon dried thyme
- 1/2 teaspoon pepper
- 1/2 teaspoon kosher salt optional
- 1 lemon sliced
Directions
- Preheat the oven to 375 degrees F.
- Cut the chicken into serving-size pieces and arrange them in a 9x13-inch baking dish.
- Combine the preserves, the mustard, the lemon rind, the lemon juice, the thyme, the pepper, and the salt in a medium-sized bowl, whisking until smooth.
- Pour the sauce mixture over the chicken.
- Place a lemon slice on each piece of chicken or evenly cover the baking dish with the slices.
- Bake until cooked through at 165 degrees F internally, about 30 minutes.
