Ingredients
For the dumplings:
- 3 pounds medium potatoes peeled and quartered
- 12 cups water plus more, to taste
- 1 cup all-purpose flour
- 3 large eggs lightly beaten
- 2/3 cup dry breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
For the browned butter sauce:
- 1/2 cup butter cubed
- 1 tablespoon onion chopped
- 1/4 cup dry breadcrumbs toasted
- basil optional, to taste, chopped, for garnish
Directions
- In a Dutch oven, add the potatoes and enough of the extra water to just cover them.
- Place the Dutch oven on the stovetop and bring the water to a boil.
- Reduce the heat to low and simmer the potatoes, uncovered, until they are tender, about 15-20 minutes.
- Drain the potatoes and transfer them to a large bowl.
- Add the flour, the eggs, 2/3 cup of the breadcrumbs, the salt, and the nutmeg to the potatoes and mash to combine.
- Shape the potato mixture into 16 (2-inch) balls.
- In a clean Dutch oven over high heat, add 12 cups of the remaining water and bring it to a boil.
- Carefully add the potato balls to the boiling water.
- Reduce the heat to low and simmer the potato balls, uncovered, until a toothpick inserted into the center comes out clean, about 7-9 minutes.
- While the dumplings cook, in a small, heavy saucepan over medium heat, add the butter and the onions and cook, while stirring constantly, until the butter is melted and reaches a rich golden-brown, about 5-7 minutes.
- Transfer the browned butter mixture from the heat.
- Add the remaining toasted breadcrumbs to the browned butter mixture and stir to combine.
- Drizzle the dumplings evenly with the browned butter sauce.
- Top with the basil and serve.
