Ingredients

8 ounces bow tie pasta
1 1/2 tablespoons olive oil
4 cloves garlic minced
1 pound zucchini cut into cubes
salt to taste
pepper to taste
1/2 cup parmesan cheese grated, plus more, to taste, for garnish
1/4 cup cream cheese can substitute ricotta
red pepper flakes optional, to taste, for garnish

Directions

In a large pot of salted, boiling water, cook the bow tie pasta to al dente, according to the package directions.
Reserve about 1/2 cup of the pasta water and drain the remainder.
In a large pan, add the olive oil.
Add the garlic to the heated oil and cook until it is fragrant, about 30 seconds.
Add the zucchini cubes, the salt, and the pepper, to the garlic and toss to combine.
Cook the zucchini-garlic mixture until the zucchini cubes have slightly browned and softened, about 8-10 minutes.
Add the cooked bow tie pasta to the zucchini-garlic mixture and stir to combine.
Add 1/2 cup of the parmesan cheese and the cream cheese to the pasta mixture and cook over medium-high heat, stirring frequently, about 1 minute.
Add 1-2 tablespoons of the reserved pasta water to the pasta mixture and stir to combine. If the sauce still seems too thick, add a little more of the pasta water.
Serve the pasta garnished with the extra parmesan cheese and the red pepper flakes.
