Ingredients
- 1 (8.5-ounce) package of cornbread/muffin mix
- 1 cup mayonnaise
- 1/2 cup sweet pickle relish
- 2 (15-ounce) cans of pinto beans rinsed and drained
- 4 medium tomatoes chopped
- 1 medium green pepper chopped
- 1 medium onion chopped
- 10 bacon strips cooked and crumbled
Directions
- Preheat the oven to 400 degrees F.
- Grease an 8-inch square baking pan.
- Prepare the cornbread batter according to the package directions.
- Pour the batter into the prepared baking pan.
- Bake until a toothpick inserted into the center comes out clean, about 15-20 minutes.
- Allow the cornbread to cool completely in the pan on a wire rack.
- Coarsely crumble the cornbread into a large bowl.
- In a small bowl, mix the mayonnaise and the relish.
- In a 3-quart trifle bowl or a glass bowl, layer 1/3 of the cornbread and 1/2 of the beans, 1/2 of the tomatoes, 1/2 of the pepper, 1/2 of the onion, 1/2 of the bacon, and 1/2 of the mayo mixture.
- Repeat the layers.
- Top with the remaining cornbread.
- Cover and refrigerate for at least 2 hours and up to 4 hours.
- Serve.
