Ingredients
- 1 (3-pound) rump roast
- kosher salt to taste
- 2 tablespoons butter
- 1 (2-ounce) package dry onion soup mix
- 1 cup beef broth or stock
- fresh parsley to taste, chopped, for garnish
Directions
- Transfer the rump roast to a large plate and let it rest until it reaches room temperature, about 30-40 minutes.
- Preheat the oven to 300 degrees F.
- Trim any of the excess fat from the roast and generously rub all sides with the salt.
- In a heavy roasting pan or a Dutch oven over medium-high heat, melt the butter.
- Add the roast to the melted butter and sear on all sides until browned, about 1 minute per side.
- Sprinkle the onion soup mix over the top of the seared roast, then pour in the beef broth.
- Cover and bake the roast until it is fall-apart tender and reaches an internal temperature of 145 degrees F, about 3 hours.
- While still covered, transfer the pan to a wire rack and let the roast rest, about 10-15 minutes.
- Slice and serve the roast, garnished with the parsley.
