Ingredients

  • 1 pound ground beef
  • 1 cup salsa
  • 1 (1-ounce) package taco seasoning
  • 1 (15-ounce) can black beans rinsed and drained
  • 2 cups frozen corn thawed
  • 1 (2.25-ounce) can sliced black olives drained, plus more, to taste, for topping
  • 1 (8.5-ounce) package cornbread mix plus the ingredients called for on the package
  • 1 cup cheddar cheese grated
  • 1 (4-ounce) can diced green chiles drained
  • jalapeño pepper optional, to taste, sliced, for topping

Directions

  • Position the oven rack to the center position.
  • Preheat the oven to 350 degrees F.
  • Lightly coat a 8-inch square baking dish with nonstick cooking spray.
  • In a pot or a large skillet over medium heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-8 minutes.
  • Drain the excess grease from the skillet.
  • Add the salsa and the taco seasoning to the ground beef and stir to combine.
  • Over medium heat, bring the beef mixture to a simmer.
  • Lower the heat to low and simmer the beef mixture until thickened, about 5 minutes.
  • Add the black beans, the corn, and the can of the sliced black olives to the beef mixture and stir to combine.
  • Transfer the beef mixture to the prepared baking dish, spreading it out evenly.
  • Prepare the cornbread batter according to the package directions and using the ingredients called for on the package.
  • Add the cheddar cheese and the green chiles to the batter and stir to combine.
  • Spread the batter over the beef mixture in the prepared baking dish, spreading it out to the edges of the dish. Do not stir the batter into the beef mixture.
  • Bake, uncovered, until the cornbread is golden-brown and a toothpick inserted into the cornbread comes out clean, about 30-35 minutes.
  • Serve topped with the extra black olives and the jalapeño slices.
