Ingredients

  • 1 (12-ounce) package gnocchi
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion diced
  • 4 cloves garlic roughly chopped
  • 1 pound ground chicken
  • kosher salt to taste
  • freshly cracked black pepper to taste
  • 2 cups marinara sauce
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup parmesan cheese shredded
  • 1 1/2 cups mozzarella cheese shredded
  • 1 (8-ounce) ball fresh burrata
  • fresh basil or oregano optional, to taste, for garnish
  • garlic toast optional, to taste, homemade or store-bought, hot, for serving

Directions

  • Preheat the oven to 425 degrees F.
  • In a large pot of boiling water, add the gnocchi and cook it according to the package directions.
  • Reserve 1/4 cup of the pasta water and drain the remainder.
  • In a large nonstick, cast-iron skillet over medium-high heat, add the olive oil.
  • Add the onions and the garlic to the hot oil and cook, while stirring occasionally, until softened, about 5 minutes.
  • Add the ground chicken to the onion mixture and cook, while stirring occasionally and breaking up the chicken with a wooden spoon, until the chicken is no longer pink and the onions are golden-brown, about 10-12 minutes.
  • Transfer the skillet from the heat.
  • Season the chicken mixture with the salt and the black pepper.
  • Add the gnocchi, the reserved pasta water, the marinara sauce, and the red pepper flakes to the chicken mixture and stir to combine.
  • Add the parmesan to the chicken mixture and stir to combine.
  • Sprinkle the chicken mixture evenly with the mozzarella.
  • Bake on the top rack of the oven until it is hot and bubbly and the cheese turns golden, about 15 minutes.
  • Allow the skillet to rest for 5 minutes.
  • Tear the burrata and place it evenly on top of the chicken mixture.
  • Season the chicken mixture with the salt and the black pepper.
  • Serve with the basil and the garlic toast.
