Ingredients
- 1/2 cup brown sugar
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 3 tablespoons olive oil
- 1 (4-pound) pork loin
- parsley optional, to taste, chopped, for garnish
Directions
- Preheat the oven to 400 degrees F.
- Line a baking sheet or a large casserole dish with parchment paper.
- In a bowl, add the brown sugar, the cayenne pepper, the garlic powder, the paprika, the salt, the black pepper, and the olive oil and stir to combine.
- Place the pork loin on the prepared baking sheet, making sure the fat cap faces up.
- Rub the brown sugar mixture all over the top and sides of the pork loin.
- Roast the pork loin for 10 minutes.
- Reduce the oven temperature to 350 degrees F and continue to roast the pork until it reaches an internal temperature of 145 degrees F, about 15 minutes per pound, or 1 hour for a 4-pound pork loin.
- Allow the pork loin to rest for 10 minutes.
- Slice and serve garnished with the parsley.
