Ingredients
- 2 tomatoes sliced
- 1/3 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic minced
- 1/2 teaspoon dried Italian seasoning
- 8 slices bacon
- 1/4 cup mayonnaise
- 4 slices sourdough bread toasted
- red or green leaf lettuce to taste
- 1 avocado thinly sliced
- salt to taste
- black pepper to taste
Directions
- In a 9x13-inch baking dish, add the tomato slices, spreading them out evenly.
- In a bowl, add the olive oil, the balsamic vinegar, the garlic, and the Italian seasoning and whisk until combined.
- Pour the olive oil mixture evenly over the tomatoes in the baking dish.
- Cover the baking dish with foil or plastic wrap and chill it in the refrigerator, flipping the tomatoes occasionally, for at least 2 hours.
- In a skillet over medium-high heat, add the bacon and cook, flipping them once, until they are crispy and the fat is rendered, about 7-10 minutes.
- Spread the mayonnaise evenly on 1 side of each slice of the bread.
- On 2 of the mayo-smeared sides of the bread slices, evenly add the lettuce, the marinated tomato slices, and the bacon.
- Season the avocado slices with the salt and the black pepper.
- Add the seasoned avocado slices evenly on top of the bacon layer on each of the sandwiches.
- Close the sandwiches with the remaining bread slices, mayo-side down.
- Slice in half and serve.
