Ingredients

1 pound bulk Italian sausage
4 cups frozen shredded hash brown potatoes thawed, can substitute russet potatoes, parboiled and chopped
1 cup cheddar cheese shredded
1 (10-ounce) package frozen chopped spinach thawed and squeezed dry
1/2 cup julienne-cut sun-dried tomatoes in oil with herbs drained
1 cup part-skim mozzarella cheese shredded
4 large eggs
3/4 cup 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons parmesan cheese grated

Directions

Preheat the oven to 350 degrees F.
In a large skillet over medium heat, add the sausage and cook, while crumbling, until it is no longer pink, about 6-8 minutes.
Drain the excess fat from the skillet.
In a large bowl, add the hash brown potatoes and the cheddar and mix to combine.
In a 7x11-inch baking dish, layer 1/2 of the hash brown mixture, 1/2 of the cooked sausage, 1/2 of the spinach, and 1/2 of the sun-dried tomatoes, in that order.
Repeat the layers.
Sprinkle the top of the bake with the mozzarella cheese.
In a bowl, add the eggs, the milk, the salt, and the pepper and whisk to combine.
Evenly pour the egg mixture over the top of the bake.
Cover the casserole and bake for 35 minutes.
Sprinkle the bake with the parmesan cheese.
Bake, uncovered, until it is bubbly and the cheese is melted, about 10-15 minutes.
Let the casserole stand for 5-10 minutes.
Serve.
