Ingredients
- 4 large eggs
- 1/4 cup half-and-half or milk
- 1/2 teaspoon kosher salt
- 1/4 cup cilantro finely chopped
- 1 cup Mexican-blend cheese shredded
- 1 cup goat cheese crumbled
- 2 cups kale thinly sliced
- 1 1/2 cups tomatoes chopped
- 1/2 cup corn drained
- 4 cups tortilla chips
Directions
- Preheat the oven to 400 degrees F.
- In a large bowl, add the eggs, the half-and-half, and the salt and whisk until well-combined.
- Add the cilantro, the Mexican-blend cheese, and the goat cheese to the egg mixture and stir to combine.
- Add the kale, the tomatoes, the corn, and the tortilla chips to the cheese mixture and toss to coat.
- Evenly add the tortilla mixture to a 2 1/2-quart baking dish, cover, and bake until the egg sets and the cheese is melted, about 30-35 minutes, uncovering for the last 5 minutes of baking to allow the top to brown.
- Serve.
