Ingredients

1 1/2 pounds ground beef
1/4 yellow onion finely chopped
2/3 cup seasoned dry breadcrumbs
1/3 cup whole milk
1 large egg lightly beaten
1 1/2 teaspoons kosher salt divided
1/2 teaspoon coarse ground black pepper divided
2 pounds potatoes peeled and cut into 1-inch chunks
1/3 cup unsalted butter
1/2 cup whole milk
1/2 cup bacon bits cooked and crumbled
1 cup cheddar cheese shredded

Directions

Preheat the oven to 375 degrees F.
In a large bowl, combine the beef, the onion, the breadcrumbs, the milk, the egg, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper.
Press the meat mixture into a 9x9-inch baking dish.
Bake, uncovered, for 15 minutes.
Drain the excess fat from the baking dish.
In a large pot, cover the potatoes with just enough water (about 1 inch of water over them) and bring to a boil over high heat.
Cook the potatoes until fork tender, about 15 minutes.
Drain the water and add the milk, the butter, the remaining salt, and the remaining pepper, mashing it all together until creamy.
Spread the mashed potatoes over the meatloaf base.
Top the mashed potatoes with the bacon and the cheddar cheese.
Bake until the bacon is sizzling, the cheese is bubbly, and the mashed potatoes are slightly crispy on top, about 15 minutes.
Serve.
