Ingredients

For the meatloaf:

1 1/2 pounds ground beef
3/4 cup fresh breadcrumbs
1/2 cup chili sauce
1 large egg
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

For the gravy:

1 tablespoon butter
1 cup mushrooms freshly sliced
2 tablespoons onion minced
1 cup beef broth
2 tablespoons water
1 tablespoon cornstarch

Directions

Preheat the oven to 350 degrees F.
Combine the beef, the breadcrumbs, the chili sauce, the egg, the salt, and the pepper in a large bowl, mixing thoroughly but gently.
Press the beef mixture into an 8x4-inch loaf pan.
Place the loaf pan on a rack in a roasting pan.
Bake the meatloaf until the meat is well-done with no trace of pink, reading 160 degrees F when tested with a meat thermometer, about 1 hour.
Let the meatloaf rest for 10 minutes.
Melt the butter in a medium saucepan over medium heat.
Add the mushrooms and onions and cook, stirring, until tender, about 5 minutes.
Add the beef broth and simmer, stirring occasionally, for 5 minutes.
Mix together the water and the cornstarch in a small cup.
Mix the cornstarch mixture into the broth mixture and cook, stirring, until the gravy is thickened, about 1 minute.
Serve the meatloaf with the gravy.
