Ingredients
- 1 cup ketchup divided
- 1 cup barbeque sauce
- 2 pounds lean ground beef
- 30 buttery crackers crumbled
- 1 (2-ounce) packet onion soup mix
- 2 eggs
- 3 cups macaroni noodles
- 2 cups milk
- 1 (10.5-ounce) can condensed cheddar cheese soup
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 4 cups mozzarella and cheddar cheese blend divided
Directions
- Preheat the oven to 350 degrees F.
- Grease a 9x13-inch baking dish.
- In a medium mixing bowl, add the ketchup and the barbeque sauce and stir until combined.
- In a large bowl, add the beef, the cracker crumbs, the onion soup mix, and the eggs and use your hands to combine.
- Pour the beef mixture into the prepared baking dish and press it out evenly.
- Spread the ketchup mixture on top of the meat mixture.
- Bake the meatloaf for 30 minutes.
- While the meatloaf is baking, cook the macaroni noodles to al dente according to the package directions. Drain.
- In a large mixing bowl, add the milk and the cheddar soup and whisk until no lumps remain.
- Add the salt, the pepper, the garlic powder, and the onion powder into the milk mixture and whisk well.
- Add the cooked macaroni to the milk mixture and stir until all the noodles are coated in the liquid.
- Add 2 cups of the cheese to the milk mixture and stir well.
- Pour the macaroni mixture on top of the beef mixture and spread it out evenly.
- Sprinkle the remaining cheese over the macaroni mixture.
- Bake until the cheese on top is completely melted and just starting to brown, about 17-20 minutes.
- Let the casserole sit for 5-10 minutes.
- Serve.
