Ingredients
- 1/4 cup salsa
- 1/4 cup fresh lime juice
- 1/4 cup cilantro chopped
- 2 tablespoons taco seasoning
- 2 tablespoons vegetable oil
- 2 pounds chicken breast boneless and skinless
- olive oil to taste, for oiling the grill grates
Directions
- In a small bowl, whisk the salsa, the lime juice, the cilantro, the taco seasoning, and the vegetable oil together.
- Poke the chicken breasts all over with a fork.
- Place the chicken breasts in a resealable plastic bag and pour the salsa marinade over top.
- Seal the bag and refrigerate the chicken breasts for at least 30 minutes and up to 4 hours.
- Preheat the grill to medium heat. Brush the grates with the olive oil.
- Place the chicken breasts on the grill and cook until they reach an internal temperature of 165 degrees F, about 4-6 minutes per side.
- Transfer the chicken breasts to a plate to rest for 5 minutes.
- Serve warm.
