Ingredients

  • 8 tablespoons unsalted butter plus more, to taste, for greasing the dish
  • 1/2 cup milk
  • 1/2 cup white sugar
  • 1/2 cup brown sugar firmly packed
  • salt to taste
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 2 cups confectioners' sugar

Directions

  • Use the extra butter to grease a 9x13-inch baking dish.
  • In a heavy pan over medium heat, add the remaining 8 tablespoons of the butter, the milk, the white sugar, the brown sugar, and the salt and bring to a boil, stirring constantly, about 6 minutes.
  • Transfer the pan from the heat and let the sugar mixture cool briefly.
  • Add the vanilla, the cocoa powder, and the confectioners' sugar to the cooled sugar mixture and beat with an electric hand mixer until the fudge is smooth and thick.
  • Pour the fudge into the prepared baking pan and let it rest until it is cool enough to touch.
  • Use a spatula to roll the fudge into a log-shape and wrap it in plastic wrap.
  • Place the fudge log in the freezer to chill for 20 minutes.
  • Slice and serve.
