Ingredients
For the streusel topping:
- 2/3 cup light brown sugar packed
- 2/3 cup all-purpose flour spooned and leveled
- 2 cups cinnamon-sugar cereal crushed
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter melted
For the casserole:
- 1 loaf French bread sourdough, or challah
- 8 large eggs
- 2 1/4 cups whole milk
- 1 teaspoon ground cinnamon
- 1/2 cup light brown sugar packed
- 1 tablespoon vanilla extract
Directions
- Line a baking sheet with parchment paper.
- In a large bowl, combine the 2/3 cup of the light brown sugar, the flour, the cereal, 1 teaspoon of the cinnamon, and the butter using a rubber spatula. The mixture should become wet and gritty.
- Pour the streusel mixture onto the prepared baking sheet to dry slightly.
- Spray a 9x13-inch pan with nonstick spray.
- Slice and cube the bread into 1-inch pieces.
- Spread the bread cubes in the prepared baking pan.
- Whisk the eggs, the milk, the remaining cinnamon, the remaining brown sugar, and the vanilla together until no lumps remain.
- Pour the milk mixture over the bread.
- Cover the pan with plastic wrap and chill in the refrigerator for at least 3 hours and up to overnight.
- Preheat the oven to 350 degrees F.
- Transfer the pan from the refrigerator and discard the plastic wrap.
- Sprinkle the streusel topping on top of the casserole.
- Bake until golden-brown on top, about 45-55 minutes.
- Serve.
