Ingredients
- 1 ripe avocado sliced
- salt to taste
- butter to taste
- 1 egg
- 1 slice bread of your choice, toasted
- 2 cherry tomatoes sliced
- black pepper optional, to taste, for garnish
Directions
- In a bowl, add the avocado and the salt and using a fork, mash it to your desired level of smoothness.
- In a pan over medium heat, melt the butter.
- Crack the egg into the melted butter and cook it sunny-side up, about 2-3 minutes. For a faster and more even cook, cover the pan while cooking.
- Spread the mashed avocado on the toast.
- Top the avocado layer with the tomatoes and the egg.
- Serve garnished with the black pepper.
