Ingredients
- 1 pound lean ground beef
- 1/2 cup onions finely chopped
- 1 egg
- 12 saltine crackers finely crushed
- 1 1/2 cups Mexican-style four cheese blend finely shredded, divided
- 1 cup thick and chunky salsa divided
Directions
- Preheat the oven to 400 degrees F.
- Spray 12 muffin cups with nonstick spray.
- In a bowl, mix the ground beef, the onions, the egg, the cracker crumbs, 1 cup of the cheese, and 1/2 cup of the salsa until they are just blended.
- Press the meat mixture into the prepared muffin cups.
- Use the back of a spoon to make indentations in the center of the meatloaves.
- Place the muffin pan on a foil-covered baking sheet.
- Bake until the meatloaves are cooked through, about 20-25 minutes.
- Top each meatloaf with the remaining salsa and the remaining cheese.
- Bake the mini loaves until the cheese has melted, about 3 minutes.
- Serve.
