Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 large egg
- 1 1/3 cups milk
- 1/2 cup pepperoni diced
- 1/2 cup salami diced
- 1 cup mozzarella cheese shredded
- 1/2 cup prepared pizza sauce warmed, for serving
Directions
- Preheat the oven to 375 degrees F.
- Coat a mini-muffin tin with cooking spray.
- In a medium-sized bowl, add the flour, the baking powder, the salt, the dried basil, and the dried oregano and whisk to combine.
- In a separate bowl, add the egg and beat it well.
- Add the flour mixture and the milk to the beaten egg and stir to combine into a batter.
- Add the pepperoni, the salami, and the mozzarella cheese to the batter and fold to combine.
- Allow the batter to rest for 10 minutes.
- Spoon the batter into the prepared muffin cups.
- Bake until browned, about 15-20 minutes.
- Serve warm with the pizza sauce.
